Perfect corn fritters

A classic brunch option.

Serves 4

1 egg
1 Tbsp milk
1 cup plain flour
1 tsp baking powder
1 can creamed corn
Salt and pepper to taste
Oil for frying
4 slices of bacon
Onion marmalade
Rocket to serve


In a bowl mix together the egg, milk, baking powder, flour, creamed corn and season to taste. Add extra milk if the batter seems too stiff but be careful not to overwork or fritters will be tough.

Heat some oil in a fry pan on a medium heat and add large spoonfuls of the batter to the pan. Flip the fritters when they start to bubble on the top—this should take about two minutes. Once flipped cook for a further two minutes. To test if the fritters are cooked through, pierce with a toothpick and if it comes out clean the fritters are ready.

Cook the bacon and layer with some of the fritters, the onion marmalade and rocket to serve. Sprinkle over some crumbled feta to finish if you like.
