Microwave peanut brittle Graeme Murray

Microwave peanut brittle

Perfect as a gift and so simple to make.

1 1/2 cups dry roasted peanuts
1 cup white sugar
1/2 cup golden syrup
1 pinch salt
1 Tbsp butter
1 tsp. vanilla essence
1 tsp bicarbonate soda
2 Tbsp freeze dried raspberries


Grease a baking tray and set aside. In a microwave safe bowl combine peanuts, sugar, golden syrup and salt.

Cook in microwave for 5-7 minutes on high. The mixture should be brown and bubbling. Keep an eye on it as it can burn, and be careful when handling, as mixture will be very hot.

Stir in butter and vanilla, cook for a further 2-3 minutes.

Quickly stir in bicarbonate soda until mixture begins to foam. Pour immediately onto greased baking tray. Crush the freeze-dried raspberries in your hand and sprinkle over the brittle, or if you don't have those sprinkle over some more roasted, chopped peanuts.

Leave the brittle to set. This should take about 10-15 minutes. Snap the brittle in to pieces and place in an airtight container.
